  • 1 red kuri squash
  • 1 onion 
  • 1 chicken stock cube 
  • 40 cl milk 
  • 20 cl whipping cream 
  • Olive oil 
  • Salt and ground pepper

  • Peel the squash, remove the seeds and chop into pieces. Peel and chop the onion. 
  • Put a tablespoon of olive oil and an onion in a saucepan
    Add the pumpkin and fry for 5 minutes
  • Cover with the milk and 40 cl of water and add the stock cube.
  • Season with salt and pepper. Bring to a boil and leave to cook for 35 min. 
  • Blend. Return to a gentle heat. 
  • Mix in half of the cream. 
  • Pour the soup into bowls and add a swirl of cream
